Chef Nathaniel Schoen-Roda started his journey in the kitchen at an early age. His mother used cooking and baking as a way of teaching him math skills, which sparked his desire to learn more about cooking.


Originally from Ohio and having lived in Florida, New Mexico, Colorado, and Arizona, Chef Nathaniel has journeyed across the United States learning different techniques and cooking styles.


Starting at the age of 14 as a busser at a family friend’s small café in Melbourne, FL, Chef Nathaniel met a chef that further sparked his desire and passion to learn more about food and cooking. Once he graduated from high school in Albuquerque, NM Chef Nathaniel began his college career at Western New Mexico University in pursuit of a career in football.


After fully abandoning his drive to work in kitchens and two shoulder surgeries Chef Nathaniel decided to transfer to Northern Arizona University, and eventually graduated from the Franke College of Business with his degree in business administration.


This was also where Chef Nathaniel re-ignited his desire to work in restaurants and picked up where he had left off prior to heading off for college. After he graduated from Northern Arizona University Chef Nathaniel decided to move to Denver, CO to attend Johnson and Wales University, arguably one of the best culinary programs in America.


Chef Nathaniel graduated Magna Cum Laude and began his career as an Executive Chef shortly after. While mostly working in privately-owned casual-upscale restaurants.   


Chef Nathaniel also has experience in fine dining from Little America Hotel, having also spent a number of years working under James Beard award winning chefs at the nationally acclaimed restaurant, Euclid Hall in downtown Denver, CO.


Chef Nathaniel has won a number of local Denver cooking competitions, most notably, Best Grilled Cheese at the Grilled Cheese and Beer Fest in Denver 2018 and cannot wait to get back out into the competitive cooking world once we are able to again.


Chef Nathaniel now lives in Aurora, CO with his wife and two daughters, whom he is also teaching to cook.
